If I'm visiting Sydney, where should I eat dinner?

So many to choose from, but – apart from my place Bistro Red Lion by Manu – I’d say King Clarence, modern Asian fusion.

The lunch set at King Clarion: Korean fried chicken, sashimi platter, tamago kake gohan, house-made pickles and miso soup.

If you had to spend the rest of your life eating only French, Australian or British cuisine, which would you choose?

That one is pretty easy. British hasn’t got much of a cuisine, Australia is a melting pot of different cuisine that I enjoy, but it has to be French, one of the most respected, popular and delicious cuisine in the world.

Would you rather receive three Michelin stars or an Emmy?

That is a very interesting question, as a young version of me I would have said three Michelin stars, 10 years ago I would have said a Emmy, and today neither. I do not need any validation anymore. I’m happy with who I am.

If I'm invited to a small, casual dinner party at your place, what will you serve?

Well that depends on the day and the season. Let's say it's summer: everything to share, dips, cured or marinated seafood like ceviche, a great piece of beef on the BBQ with a zingy chimichurri.

Which five words best describe you as a teenager?

Cheeky, funny, caring, hard working, frustrated.

What's one personal trait of yours that you work on keeping in check?

Grumpiness.

What's the best book you've ever read?

The Alchemist, by Paulo Coelho, I have followed that mantra all my life.

A book about following your heart: The Alchemist, by Paul Coelho

If you were stranded on a desert island for a year with five ingredients, what would they be?

Water, potatoes, butter, eggs, salt.

What are the five essential elements of your perfect weekend?

Sunny weather, ocean swim, my favourite people, being at home and good food.

What's one thing you cook better than anyone else?

I have to say SAUCES.
