A man remains on the run after pouring a thermos of hot coffee on a baby at a Brisbane park last week.

The nine-month-old boy was enjoying a picnic with his mum and her friend at Hanlon Park, in Stones Corner, when they were approached by the man around midday on Tuesday, Nine reports.

The man allegedly poured the hot liquid – believed to be coffee – over the boy before fleeing the scene.

The boy was rushed to hospital and has undergone surgery after sustaining burns to his face and chest.

"It's torture. I am supposed to be his protector and I couldn't protect him," the mother told Nine Network the day after the incident.

"I'm just having flashbacks all the time about what happened."

On Wednesday, Detective Inspector Paul Dalton told reporters the attack was "callous and cowardly".

"In 35 years of being a police officer I've never come across a job where a child this young in these circumstances has been attacked."

A GoFundMe page set up by the mother's friend to help pay for his recovery has since raised AU$114,364 (NZ$124,460).

The boy was expected to undergo a third surgery today.
